Marinara sauce. We love it for it's complex and wholesome taste. We hate it for the stains it leaves when that whole in our bottom lips seems to appear.
The other day I tried my hand for the first time at making Italian Biscotti with my friend Mandy, who just happens to be born and bred Italian. Needless to say it wasn't exactly "like Nonna (grandma) used to make". I think she is just being tough on our little creation, lovingly deemed "Chriscotti".
That's when I decided to beat her at her own Italian game. This is me striking the first blow...
Salsa Rossa
(Made with ingredients on hand, so only made a small batch)
-4 Roma Tomatoes, pureed
- 3 cayenne peppers, crushed to dust
-1 tsp. dried oregano
-1 tsp. dried basil
-1/4 tsp. Hawaiian Black Lava Sea Salt
-1/2 tsp Rosemary
-2 cloves garlic, pulped
-1 tsp extra virgin olive oil
-1/4 cup Barefoot Cabernet Sauvignon
-Puree the tomatoes and toss all the ingredients in. Simmer for a good hour or more to allow the flavors to marry.
Simple, a little time consuming, but very tasty according myself and even Mandy. Now let's see what she has up her sleeve!

ReplyDeleteTres bien! Baked Ziti it is. And for your information, my little italian plumb, it is spelled ZITI, not Zitti! This wednesday we shall make the pasta and then create our own sauces and baked ziti, come together for a teste test of ourselves and who ever else in a blind taste test because I know Kevin would vote for yours. You're on!
