Snacking With Some Authority


A while back I was into my typical daily routine of surfing all the food and cooking websites I like that are updated with new recipes each morning.  I came across a recipe for a fig and goat cheese pizza that caught my eye.  Finally this morning I had a little time before work and some pre-made pizza dough from Trader Joe's.  This unique and exciting taste makes the same old dull pizza look like bore.  It is great as an addition to a bread basket, by the slice with a salad, or as an simple appetizer.
So let's start this thing:



What You Need:
1 Package premade dough from Trader Joe's
1/2-2/3 cup dried figs
1/2 small log of herb rolled Chevre goat cheese
1/2 Onion
1 to 1 1/2 Tbs unsalted butter

The Operation:
-Preheat the oven to 400 (F)
-Start by placing the dough in a bowl to come to room temperature for 3 minutes
-While dough is rising and resting, heat the butter in a pan and caramelize the onions
-Place the dried figs in a bowl and pour hot water over them.  Let them sit and plump a little for 10 minutes.
-Slice up the figs and add them to the caramelized onions to soften
-When the dough is ready, begin to shape it into a circle by tossing it and pull it as you rotate it in your hands.  Be sure to flour your work surface and hands so the dough will not stick.  There is not too much need to knead the dough as it will become too tough to work with (Kneading the dough activates the gluten in the flour which causes your dough to be elastic.  Over kneading can lead to some pretty tough dough).
-To prevent the dough from bubbling up to much you can prick it with a fork after it is shaped and on the pan.  -Place the onion and fig mixture on the dough as you would any pizza.
-Place sliced of the goat cheese sporadically on the pizza and place in the preheated oven
-Once the pizza dough is looking browned, as is the cheese, remove the pizza from the oven and allow the pizza to cool for a few minutes.
-Cut the pizza however you wish and enjoy.



I find that the tangy and fresh flavor of the goat cheese really accents the sweetness of the onions and figs.  I think it is a fantastic combination that could work well for a variety of other dishes from pastas to even homemade burger patties with a nice little twist.
