Leftovers as far as the eye can see...


So you say you are swamped with all those Thanksgiving leftovers? You have no idea what to do with the mountains of mashed potatoes, tons of turkey, heaps of stuffing, and as much cranberry sauce as the day is long? Not to mention the mass amounts of pies and desserts. Those I can’t help you with, you are on your own.


What I want to do is give a few ideas of what you can transform some of those leftovers into rather than eating and re-eating Thanksgiving meal over and over again.


Turkey
What can’t you do with leftover turkey? Turkey ala-king, turkey pot pie, turkey divan, turkey sandwiches, turkey salad, turkey noodle soup, turkey lettuce wraps, or turkey instead of beef for Shepherd’s pie.




Gravy
You can use leftover gravy to thicken and added flavor to sauces for a variety of meats, turkey stroganoff, stews, or turkey casserole.



Stuffing
With leftover stuffing you can mix it with beaten eggs, bacon, turkey, and a handful of other vegetables you like to make a tasty and savory bread pudding or strata. I highly recommend looking at my earlier posting about deboning and stuffing a whole chicken. You can use the leftover stuffing to make a chicken balantine with a whole deboned bird.



Mashed Potatoes
Use your mashed potatoes to top your turkey Shepherd’s pie. You can make potato gnocchi for an Italian soup or pasta dish. You can divide your mass of potatoes into individual servings to be frozen for up to one year, taking out a serving at a time when you feel like it. You can also toss in some chopped garlic, chives, and cheddar cheese for extra zing. Try placing the potatoes in a piping bag or plastic bag fitted with a decorative tip and pipe it onto a serving platter with your main dish.


If I have said it once, I have said it a thousand times: look around the internet and cookbooks for new and interesting recipes to put a spin on these leftovers. A little imagination and a few minutes can really help you clear out the fridge. There is nothing I hate like throwing out good food.
